- 3 Tbsp. coconut oil (olive oil may be substituted)
- 1 Vidalia onion (medium/large sweet, diced small)
- 1 1/4 lb. boneless skinless chicken breast (diced into bite-sized pieces)
- 3 cloves garlic (finely minced or pressed)
- 3 tsp. ground ginger (or 1 tablespoon fresh ginger, finely chopped)
- 2 tsp. ground coriander
- 14 oz. coconut milk (use full-fat for a richer/thicker result but lite may be substituted)
- 1 1/2 cups shredded carrots
- 1 zucchini (large, diced into bite-sized pieces)
- 8 Tbsp. thai green curry paste (or to taste, I used the whole jar for this recipe, but prefer bolder flavors, https://amzn.to/2Q1Hg2L)
- 1 tsp. kosher salt (or to taste)
- 1/2 tsp. freshly ground black pepper (or to taste)
- 2 Tbsp. lime juice
- 1/3 cup fresh cilantro (or to taste, finely chopped for garnishing, basil may be substituted, optional)
- 2 Tbsp. granulated sugar (optional and to taste)

Great, substituted the chicken with leftover turkey and added some fresh chillis then left if to sit all day before reheating in the evening.

So good! We sometimes use broccoli instead of zucchini (my sons prefer it) and equally as good!

Spicy, at least with the curry paste I used. Sauce was runny, and a little tasteless. I may have added too much zucchini to add to the problem.

This was an excellent recipe. It is a keeper. Add a jalapeño for extra kick, or more Thai green curry paste. We like it spicy.

Very good! I also added beans and used about half the jar (about 3 Tbsps) of the green curry paste. It’s very similar to the red Thai chicken curry I make. It’s not spicy either (in my opinion).

Love this recipe Averie! I've made it a few times and wanted to share my tweeks. Like the recipe says, use 3 tablespoons coconut oil and add 1 teaspoon of toasted sesame oil - so good. Sauté the onions a little longer than you think they need, until they just start to brown - it's a Louisiana thing that works for me! The spices that Averie has are perfect - 4 oz curry paste, coriander, salt and pepper, garlic, ginger - perfect. Here's a key thing I changed - 86 the zucchini and use green beans cut in half instead. And rather than shredding the carrots, cut them up to green bean size. I used about 4 carrots. I am not sure what the sugar Averie mentioned would add so I've never used it in the recipe. Between the onions and the carrots, it is plenty sweet enough for us. Kids gobble this stuff up - Great great stuff Ms Averie Sunshine!!

Super easy to make and very delicious. I served it with Naan. I used 3Tbl of green curry paste and a teaspoon of curry powder.

This is a mean green curry, green curry no really spicy, but is vary bold. A huge hit will make again maybe with a few Thai chilies and Eggplant added next time. 👍🏽

It's amazing looking recipe. We starting making curries more often now as it's easy to follow recipes and also able to get all spices and ingredients delivered from chefsperfect.Com, and we live trying a little twist with yummly recipes.. Thanks for delicious recipes..

Very good. I added 5 tbsp of Thai green paste and it was plenty spicy. I added asparagus and bean sprouts.

Wonderful. My family loved it. I actually made this twice!! I used homemadeThai curry paste. It is very easy to make and I love that it is one pot. I doubt that I’ll ever order this from a restaurant again.

I thought it was great and it did taste like you got it from a restaurant! If you want it a little thicker, bring it to a boil 2X served it over sum white rice

Came together quickly. I’d say prep time is really more like 10-15 minutes but the cook time is very quick and the results are flavorful. We used 4 tablespoons of the green curry paste (which is the whole jar) and it was very good. No sugar required.

It’s pills a bit thick so you may need to thin it out a little. I did use the whole jar to make flavor too.
