- 4 boneless, skinless chicken breasts (trimmed and cut in half lengthwise into two pieces)
- 15 oz. enchilada sauce (mild or medium green chile, If you need gluten-free, look for Hatch Gluten Free or La Victoria brand. I found Green Chile Enchilada Sauce at Amazon.com, but on the day I checked they didn’t have the gluten-free variety yet.)
- green chilies (Whole, 27-Ounce Can)

- 4 oz. reduced fat cream cheese (room temperature)
- 1/2 cup sour cream (low-fat)
- 2 cups low fat mozzarella (grated)

Excellent and easy to make. I added Chorizo as a spicy add. Love the idea for black beans and corn, will be trying that! Also, have a hard time finding canned whole green chiles, so trying roasting poblanos (couldn't find Anaheim) and I'll let you know how it goes!

I made this for my husband who loved it so much he went back for seconds and then thirds before requesting I make it again the next week. Instead of the chicken breasts, I used a 5lb roast chicken I had cooked up in the air fryer the night before and all the dairy ingredients I used were fat free or reduced fat and it came out perfect. It did take me longer than the 85 minutes they budget for this recipe and that was even with the chicken being cooked and cooled. It took me about two hours from start to finish. I am not a whiz in the kitchen, though, so I take my time. With that said, as a beginner I found this recipe easy to follow, the ingredients are simple and easy to obtain, and the results were delicious.

I browned the chicken instead of boiling it. Turned out really good.

I didn’t get the green chilies instead I added black beans and corn and only made one layer this made it more kid friendly it was very yummy

This is an alternative to using tortillas that is flavorful and easy to make.

This was outstanding. I roasted fresh Anaheim peppers instead of using canned but I think it would have been great either way.
