Description
Weeknight family dinners (and hey, dinners for company!) couldn’t be easier with this rich and comforting dish. A white wine Alfredo sauce is the perfect pairing with seared chicken, spinach, mushrooms, and prepared gnocchi. It’s a one-pan meal everyone will love. The recipe, which makes 6 cups, is a Yummly original created by Ashley Strickland Freeman.

- 1 pkg. gnocchi (16 oz., refrigerated; buy a brand that is meant to be boiled)
- 1 lb. boneless, skinless chicken breasts
- 1 tsp. kosher salt (divided, plus more to taste)
- 1/2 tsp. black pepper (preferably freshly ground, plus more to taste)
- 2 Tbsp. extra-virgin olive oil (divided, plus a little more if needed)
- 8 oz. sliced fresh mushrooms
- 3 Tbsp. salted butter
- 2 cloves garlic (minced)
- 2 1/2 Tbsp. all-purpose flour
- 1/3 cup dry white wine (such as Sauvignon Blanc)
- 1 1/2 cups whole milk
- 1 cup Parmesan cheese (freshly grated)
- 3 cups baby spinach (fresh)

Directions
- Bring a pot of water to a boil and cook gnocchi according to package directions. Scoop out and save 1/2 cup pasta water. Drain gnocchi and set aside. Meanwhile, continue with recipe.
- Sprinkle chicken with 1/2 tsp. each salt and pepper. Heat 1 Tbsp. olive oil in a large nonstick frying pan over medium-high heat. Brown chicken, turning once, until it’s cooked through and a meat thermometer inserted in the thickest portion registers 160°F, 10-15 minutes total (chicken will cook more as it stands). Transfer chicken to a plate, let rest 10 minutes, then slice into pieces about 1/2 inch thick.
- While chicken rests, add mushrooms to frying pan, sprinkle with remaining 1/2 tsp. salt, and cook, stirring occasionally, until mushrooms are browned and tender, 6-8 minutes; if the pan gets too dry, add a little olive oil. Transfer mushrooms to the plate with the chicken.
