  • 1 2/3 pounds strawberries (hulled, halved)
  • 2 tablespoons sugar
  • 1 teaspoon vanilla bean paste (or 1 vanilla pod, split lengthways, seeds scraped out)
  • 1/2 cup rice flour
  • 1/4 cup brown sugar
  • 1/8 cup shredded coconut
  • 1/4 cup dairy free margarine (softened)

    Directions

    1. Preheat oven to 350°F. Place strawberries, sugar, vanilla, 1 tbsp rice flour and 2 tbsp water in a bowl. Stir to combine. Spoon into a baking dish.
    2. Combine remaining rice flour, brown sugar and coconut in a bowl. Using fingertips, rub in margarine until mixture resembles breadcrumbs. Evenly scatter crumble mixture over strawberry mixture. Bake for 30 mins, until golden brown. Serve warm or at room temperature.
