- 1 tsp. xanthan gum (omit if your blend already contains it)
- 35 grams tapioca starch (Expandex modified)
- 1 1/2 tsp. baking powder
- 1 tsp. kosher salt
- 1 Tbsp. neutral oil (like vegetable, canola or grapeseed)
- 1 egg (50 g, weighed out of shell + 1 egg white, 25 g, at room temperature)
- 3/4 cup milk (at room temperature)

I'll have to try this again. I used Bob's Red Mill all purpose gluten free flour which is a bean based flour. It can make things a little dry.

Really good I made them a bit too think, but they still turned out great. Next time I think I'll soak the tapioca/expander in the milk for an hour or so before I make it.
