Delicious and satisfying for lunch. I added some fresh chopped spinach. Will make as a side instead of mashed potatoes.

i added chicken broth, and milk to give it a creamy sauce texture. turned out really good! i also added spinach and tomatoes, might try broccoli next time

Very good recipe! My husband who doesn’t like quinoa loved it because the mushrooms give it a great taste. Be careful with the salt and pepper.

Yummy, I did the broth for the quinoa. My kids don't like mushrooms, so I substituted bacon chunks and takii seasoning. I will make this again.

Based on a few other reviews, I added some stock to the water for flavor. I also used a few dried shiitake mushrooms (used the soaking liquid as part of the water for the quinoa) and some shimeji and king oyster mushrooms. It came out delicious!

Very tasty. I love garlic so this was a thumbs up for me. I'm not a huge fan of quinoa but this was very flavorful. Also super easy to make.

awesome quick meal that my family loves. I tweeked the recipe slightly by sauteeing mushrooms first, and then adding quinoa directly in and cooking all together. I also add sliced avocado to top of dish after plating. This has turned into my go to dish for busy days when a one pot meal is a savior.

I have to agree with reviewers below that following the recipe as is, this is a pretty tasteless recipe. I tried to make some adjustments in advanced based on the reviews - added onion, dried basil and curry powder - but it did not help. I forgot to cook the quinoa in chicken broth and perhaps this would have saved the recipe, but it's honestly not worth it to me to try this out again.

I really enjoyed this dish and served it as a pain. I halved the recipe and 90g raw quinoa made two lunch/light dinner sized portions. Didn't use the Parmesan but I cooked my quinoa in a strong stock instead of water and think this made all the difference. Hearty and savoury without being heavy, and less than 250 cals per portion. Next time I might up the mushrooms
