- 3 cups honeydew (cut into pieces about 1 inch square)
- 1 cup pineapple (cut into pieces about 1 inch square, optional, can use all melon)
- 6 Tbsp. salad dressing (Spinach, recipe follows)
- 3 Tbsp. fresh dill (chopped, use more or less, depending on how much you like dill)
- 1/4 cup red wine vinegar
- 1/4 cup sugar (or Splenda, use Splenda for the South Beach Diet)
- 1 tsp. garlic (finely minced fresh)
- 1/4 tsp. salt (I used fine sea salt)
- 1/4 tsp. black pepper (I used fresh ground pepper)
- 1/4 tsp. mustard powder
- 1/4 tsp. onion powder
- 1/2 cup extra-virgin olive oil

its not bad, definitely an acquired taste. sweet and bitter. gotta get the balance right but its bettet to have not enough bitter.
