I don’t do red peppers, so I omitted them. Otherwise I held to the recipe (using whole wheat tortillas — “soft taco size”). Great flavor, will be the perfect size for me as I grab something from the fridge on my way to work. This is just a hint for anyone who hasn’t already discovered this, but if you want your tortilla to hold its shape after you’ve filled and folded it, place it folded side down on medium to medium high heat skillet for maybe a minute or two, just until it starts to get toasty brown. Serves two purposes - soaks up any remaining oil in the pan (for those skinflints amongst us who want to get our maximum dollar) and sears the tortilla in its shape (for those amongst us who get mad when our tortillas fall apart).

Awesome...added some guacamole over melted cheese...added veggies....yummy
Will need a fork and knife...but very tasty
