I'm Cuban, this is an amazing recipie. Of course as it says in the recipie, don't over mix. I also use raw sugar for the caramel, farm fresh eggs, and after the flan is set while still in the ramekin, I add a dash of cinnamon to the base of the flan. Serve with Cuban coffee and perfection.
