- 3 oz. pancetta (chopped)
- 3/4 tsp. salt (plus more for pasta water)
- 1/2 tsp. ground black pepper (freshly)
- 1/2 cup dry red wine
- 2 cups beef stock
- 1 cup crushed tomatoes (canned)
- 1/2 tsp. dried oregano
- 1 cup whole milk
- 1 lb. fettucini (fresh, available in the refrigerator section of most supermarkets; see note)
- parmigiano-reggiano (Freshly grated, for serving, optional)
- fresh basil (Handful chopped, or parsley, for serving, optional)

It was wonderful! Since it’s just the two of us I made 8 oz of pasta and measured out 2 1/4 C of sauce. I will save the other half of the sauce in the freezer and we will enjoy it again soon.

Hearty and comforting! Just missing a bit of zip, so I added crushed red peppers while simmering.

This dish had so much potential! Where it went wrong was that final step of adding milk which neutralizes the rich flavor provided by the others ingredients, particularly the wine and bacon. So I would highly recommend this recipe given that the milk is left out.

Amazing. Used bourbon aged wine, would time the noodles as close to the end as possible.

This was outstanding! My husband and I both like a little heat in our pasta sauces sauce so I threw in some red pepper flakes and also added a yellow pepper to the onion/celery/carrot mixture since I needed to use it up. The fresh fettuccine was nice and light and was a welcome contrast with the rich sauce. Even after dinner, I kept catching my husband standing over the sauce pot dipping garlic bread in.

I used less beef stock and wine so it wouldn’t need to reduce as long and it was delicious

turned out great. used the same portions for 1/2 pound of meat. will consider using tomato paste next time to add the dark red color

i browned the meat on the side before i added it to the vegetables. i also added a teaspoon of sugar and two bayleaves. its an excellent recipe

Really yummy! I did add my own touch like some sofrito( lol I'm Puerto Rican) but other then that nothing else!

Looks and smells great! Haven’t tried it yet, but I have no doubts it’s going to be yumm.
Although I fry pancetta first, only then add the vegetables
And since I love love love mushrooms, i always add them to my bolognese.

It was delish! 😋I used a Merlot substitute 🍷 for wine and a high quality dry Fettuccini. Also dropped in fresh basil in the last cooking cycle. 🍃 Might try parsley and maybe switch out the celery or add in a mild sweeting ingredient (possibly brown sugar and margarine) to make it more savory. Otherwise it was amongst my other favorite bolognese, especially when you add in the parmesiano regiano 👌🏻🧀🍝

Really good & easy to make. Everyone enjoyed it- followed directions exactly. Only think I might do differently next time is use a beef/veal/pork mixture instead of all beef.
