- 4 Tbsp. butter
- 1 lb. chicken breast (or thighs, cut into 1 inch pieces, I used breast meat)
- 1 large potato (diced into 1/2 inch pieces)
- 3 Tbsp. seasoning (berbere, or less to taste, it's spicy!!)
- 2 cups chicken broth
- 1 bell pepper (large, seeds removed and diced)
- 2 handfuls baby spinach (about 2 oz)
- cilantro (Optional:, for garnish)

My boyfriend wants this added to the regular rotation, so that is high praise indeed! I used 2 T berbere and 1 T paprika and it was the right amount of spicy for us. It didn't cook down enough at the low simmer I had it on, so I had to crank up the heat at the end to thicken it ... next time I'd cook it at a higher heat for the 40 minutes. My biggest issue is that it desperately needed salt (there's none added at all in the recipe). I added a couple pinches when I added the berbere and it still needed much more when serving at the table.
