- 1/2 onion (large, small dice)
- 2 garlic cloves (peeled and minced)
- 1 Tbsp. dried oregano
- 1/4 tsp. ground turmeric (if needed, curry powder would be the closest substitute)
- 1/4 tsp. cumin
- 1/4 tsp. paprika
- 1/8 ground red pepper (a pinch or two teaspoon)
- 1/4 tsp. ground black pepper
- 1/2 tsp. kosher salt
- 15 oz. diced tomatoes (canned, fire-roasted are delicious if you can find them)

- fresh parsley (for garnish:, or cilantro, optional)

Great recipe, and certainly a good base to take in a direction of anyone’s choosing should you want to add your own spin. I found that it could have been a little more heat heavy (but that’s not everyone’s preference so not going to knock that) and savory, which left me wanting to balance it out a little more, but fantastic either way!

it turned out fine but I don't see a reason to make it again. it went well served over some leftover rice.

Great dish that can be made out of just staple ingredients and spices, I usually serve it with tortillas or crusty bread, and it's a very easy and tasty meal.

My spices must be to old; I had to add a mild hot sauce. But we liked it otherwise.

Well i think its tasted quite bitter than u expect... Maybe we can add tomato sauce above all of the preparation... Idk just my idea.. I dont even know if i made it right

Delicious!! Used Marinara sauce plus canned rotello chopped tomatoes with green chilis. Doubled the onions and garlic. Used Avocado oil. Loved it!!

So good! Very simple recipe that’s sure to impress. It’s even better with a little bit of crumbled bacon or sausage mixed in. Be sure to serve it over grits or polenta, like the recipe says, to really complete the meal.

This is a staple in our house. We also fry a bit of green peppers and cook with tomatoes. I wouldn't use cumin, or turmeric or onion. Italian way is simple.

Turned out great, followed recipie exactly except only put in 3 eggs was just right for 2 , just had it plain with sourdough toast no grits or anything.. used hunts fire roasted diced tomatoes with garlic so we didn’t add cloves

Nice! I followed the suggestion of adding black beans - a great idea. Ate it with pumpernickel bread. All in all, a very nice combination of spices. I'll make this again!

I put in a can of black beans to amp up the nutrition and opted out of the polenta and bread, super tasty! Will definitely make this again.
