- 2 avocados (extra-large)
- salt (to taste)
- black pepper (to taste)
- 4 large eggs

Directions
- Preheat the oven to 400°F.
- Slice the avocados in half and discard the pits. Use a spoon to scoop out a portion of the flesh from the center of each half, leaving a 1/2-inch border of flesh in the skin. Reserve the scooped-out avocado flesh for another use.
- Arrange the avocado halves cut side up in a square baking dish. Sprinkle the cavities with salt and black pepper. Carefully crack an egg into the center of each half and season with additional salt and black pepper.

I just love how many people gave this a bad review because they used bad avocados and didn't follow directions. Get a clue. Don't over cook them or they will get bitter, but more importantly dont start with an unripe avocado which is automatically bitter. Follow the recipe and scoop it out so there's enough room for the egg without overflow AND THEN the egg will cook faster and not over cook the avocado. Some people . . . SMH.

Egg was too hard against the very soft flesh of the avocado. couldn’t be eaten with a spoon very well. I didn’t like the texture and was disappointed in how egg cooked up

great, I topped with some bacon crumbles and some extra sharp ol croc cheese and just a little bit of salsa and a creamy avocado sauce. It turned out wonderfuly.
I was told restaurant quality.

Directions were good. Great idea. I just didn’t use big enough avocados so the egg was running over. Also I don’t think I like the taste of warm avocado. May make again but wasn’t crazy about it.

Because the ripeness of avocados vary greatly, I agree with some of the reviews that the avocados can have a spoiled taste.
But the recipe inspired me to modify it a bit. Try instead making soft boiled eggs (which take half the time), sprinkle some salt and pepper on both the raw avocados and eggs, and pour in the eggs.
The fresh avocado and runny eggs make a great breakfast.
Tip: Florida avocados are much larger and a great choice for this snack.

Wow! I wanted something different for branch. This was interesting dish. My first time making it and at first, I thought it was under cooked for the egg. So I left them 10 minutes more then the time on the recipe. With leftover avocados; I made a salsa to put on top. That made the dish even more tasty. I really enjoyed it. The salsa was made with habaneros, jalapeños, onions, garlic, lemon, black pepper, sea salt, and peaches. Was delicious on top of the eggs in avocados !
