my friend and i both love baking. so when we knew that we wanted to hang out one night and bake something, i looked up cheesecake and this popped up. i’m so glad it did because it’s soooooo good! i had to add extra vanilla extract because it tasted to cream-cheese-y for our likings

They turned out well, but were kind of cracked on top. I got around 30 from the yield: 18 recipe. The mini cheesecakes were very good and disappeared within 1 day! I will definitely make these again, and not make the mistake of doubling the sour cream. (They turned out kind of sour)

These mini cheesecakes are so yummy. I halved the recipe to do a trial bake. I used parchment paper cupcake liners and the cheesecakes held their shape and released easily. I topped some of them with salted caramel and some with a strawberry compote. My taste testers loved them so I will definitely make them again!

so good! I tried halving the recipe though and had some trial and error to et the crust the right consistency, but they turned out amazing and delicious!! And i paired it with strawberry/rhubarb preservers! Yum!
