This is the BEST toffee recipe I have ever used. It turned out fantastic. It doesn't stick to our teeth as much as the ones that use corn syrup. My only complaint is that all the almonds were layered across the bottom and not inside the toffee. Maybe next time I make it i will use a smaller amount. My husband refers to it as "Christmas Crack" since I've made it only around Christmas. LOL

Great recipe, though I wouldn't necessarily call it easy. My first try, the butter and sugar separated in the beginning, so I turned the heat on low and mixed vigorously. Within a minute or two they had combined, so that problem was solved. Foolishly, I kept it on medium-low and continued to mix it pretty quickly. What I ended up with after more than 15 minutes with was a mixture that was still yellow/white and the sugar crystals had not completely dissolved. More like cookie dough. The second try, I had the same problem with separation in the beginning, but again turned the heat on low and stirred vigorously until everything combined nicely. Then I turned the heat up to medium and mixed very slowly until it turned a nice brown color (about 12 minutes). It came out perfectly!

Not easy at all. I followed the directions perfectly, and my mixture separated long before it even began to turn brown. And yes, I did have my heat on medium.
