- 1 1/2 lb. boneless, skinless chicken thighs
- 1/2 cup plain yogurt (whole milk)
- 1/2 lime (or lemon)
- 1 tsp. cumin
- 1 Tbsp. olive oil
- 1 onion (medium, diced)
- 3 cloves garlic (diced)
- 1 inch ginger (diced)
- 28 oz. diced tomatoes
- 1 Tbsp. Garam Masala
- 1 tsp. paprika
- 1/2 Tbsp. cayenne pepper (this is for a spicy recipe. Use less if you'd like a milder dish)

- 1/4 cup plain yogurt (whole milk)
- chopped cilantro (to taste)

Directions
- Trim the fat from the chicken and cut into bite sized pieces.
- Whisk the yogurt, lime or lemon juice and cumin together.
- Mix the chicken with the yogurt mixture. If you have time, marinate for 20 minutes up to overnight.
