Description
Add some spunk to sheet pan veggies with this aromatic rosemary-balsamic variation. Savory, sweet, and aromatic, this dish is the perfect complement to roasted meat, poultry, or fish. The recipe is a Yummly original created by Edwina Clark, RDN.

- 1 red bell pepper
- 1 green bell pepper
- 1 red onion
- 1 sweet potatoes (medium)
- 2 garlic cloves
- 1 tsp. fresh rosemary (leaves)
- 2 Tbsp. extra-virgin olive oil
- 2 Tbsp. balsamic vinegar
- 1/2 tsp. salt
- 1 Tbsp. feta cheese (optional)

Directions
- Preheat the oven to 425 degrees F.
- Line a large baking sheet with parchment paper.
- Cut the bell peppers and red onion into 1/2 inch squares. Separate the onion layers.

I used my toaster oven, so I watched closely and pulled the pan out when the edges started turning brown...less than the full-side oven time.

I might have added a little too much balsamic vinegar, but it was still really good. Easy to follow instructions. And the vegetables came out well roasted and delicious 😋

Absolutely delicious! I needed more than 4 servings so added extra sweet potato, added a zucchini and more colored peppers. Used 2 sheet pans to keep everything on 1 layer. Cooked for about 38 mins. Also added some no salt seasoning and feta ia a must!

I ended up salting the vegetable after they came out for preference. I dont even like sweet potatoes but i ate all of them off my plate. Absolutely perfect side dish.

tonight my son and I made balsamic roasted vegetables and the garlic brown sugar glazed salmon for dinner. perfect combination. This is the best Sunday dinner my son and I have had in a long time.

So I changed my veggies up a bit. Instead of green and red, I used yellow and red bell peppers with carrots, red onions, yellow potatoes, and broccoli.. It came out superb!! I loved it.. Maybe and a little fresh ground black pepper and its AMAZING!
