- 2 cans red enchilada sauce (10 oz. per can)
- 12 oz. cooked, shredded chicken
- 1 cup Mexican cheese (shredded, for filling)
- 12 soft corn tortillas (standard 6-inch diameter)
- 1 cup Mexican cheese (shredded, for top)
- cilantro (finely chopped, optional, for garnish)

Directions
- Preheat the oven to 350°F.
- Spoon about 1/2 cup of enchilada sauce into the bottom of a 9x13-inch baking dish. Set aside.
- Place the shredded chicken, shredded cheese, and 3/4 cup of the enchilada sauce in a large mixing bowl. Mix with a rubber spatula to combine.

Turned out absolutely delicious! Very easy to make and everyone loved them! I would recommend using flour tortillas instead of corn, but that’s a preference :)

Thanks for sharing the recipe. I added cilantro and chopped jalapeños and chopped onion to the mixture, otherwise followed the recipe, delicious.

This was my first time trying enchiladas in my life and I would like to say WOWWWW this app is a real help . Tasted very authentic . Of course I added seasonings to my liking such as cumin , onion and garlic powder . Along with bean and Spanish rice on the side . DELICIOUS

Used one whole rotisserie chicken, yielded 14 oz of shredded chicken (no fat or skin). Used flour tortillas instead of corn. Made the enchiladas the night before and added the rest of the enchilada sauce and cheese the day of. Couldn't be easier. They were a hit!

it's a great, easy toss in the oven, dinner. gotta do the black beans on the side though. add salt and pepper here and there

It was a good and simple recipe. I added about 1.5 tsp of cumin and a tsp of garlic powder to the chicken mix.
