Wonderful! I reduced salt to 1/2 tsp table salt, reduced sugar to 1 c organic cane sugar, 1/2 c light brown sugar, 1/2 c white sugar. I added 1 tsp allspice, and extra ginger powder and nutmeg. Next time I’d add fresh ginger and cardamom plus vanilla extract. Wonderful with a pasture butter coated pan plus spiced flour powdering before filling. Bonus points for this recipe filling two mini loaf pans and one double air pan!

I substituted allspice for cloves as I didn’t have any cloves and accidentally used baking soda instead of powder but it came out great. It could be just a little bit moister but had nice flavor.

The breads are cooking now.
i coukd not find any 7×3 pans, opted for 3 8×4 pans.
I used a soup ladle to scoop out 2 ladles full of batter into each pan.
i out 1/4 c. chocolate chips in middle of 1, 1/4 c. pecan chips in the 2nd, and 1/ 4 c. raisins in the 3rd.
put remaining batter on the tops.
Can't wait to slice one open
Batter tastes so good with all those great spices.

I made this recipe for the first time 2 years ago and I absolutely love it. I end up making 4 batches because all my friends and neighbors ask for a loaf. Makes a great gift for the holidays. I never stray from the actual recipe because it's perfect the way it is.
