- 1 cup tapioca starch (or potato starch, not potato flour!)
- 1/2 cup millet flour (or GF oat flour)
- 2 tsp. xanthan gum
- 1/4 tsp. fine sea salt
- 1 packet dry yeast (rapid, 2 1/4 teaspoons)
- 1 1/4 cups warm water (at 110 to 115ºF)
- 3 Tbsp. extra-virgin olive oil
- 1 Tbsp. honey (or raw agave nectar to keep it vegan)
- 1/2 tsp. rice vinegar (mild, or lemon juice)
- 4 Tbsp. warm water
- 2 free range egg

Excellent. I will be making this regularly now. Double batch each week. Really, really good. I made it without a bread machine and used a metal pan, not ceramic.

I was confused by the directions for hand mixing. I have made bread in the past but not gluten-free so I wasn’t sure what to expect. The directions instruct to add all the dry ingredients including the yeast and set aside. The next paragraph instructs you to mix the yeast with warm water, so I was confused. The it doesn’t instruction how to mix the wet ingredients together with the dry. So I just put everything together and add it to the dry.
