Spicy, warm and creamy! The chili garlic sauce gave it a nice kick, while the curry gave it depth. I used both a sweet and a hot curry powder mix from the Spice House adding just the right amount of flavor.
Easy and quick soup that tastes anything but!

Only 1 tablespoon of curry and no chili paste. SO so good!

2TBS of chili paste turned out to be too hot for me but overall an easy, delicious, creamy soup. I will definitely make it again.

Velvety with a good kick. Two tsp of chilI paste, Sambal Olek, gave it just the right amount of heat. Two Tbsp of maple syrup gave a good balance of sweetness with saltiness. Easy to prepare

Absolutely delicious and easy to make. I am a fan of combing elements of other similar recipes, but you ignore. Notes: 1 carrot and 1 celery chopped and sautéed with onion mixture. 1/2 teasooon of nutmeg. 1 tablespoon of ginger. A few sprigs of thyme. Served with sprinkled smoked paprika and cilantro.

This is delicious!
Upon peeling and cutting my butternut squash, I discovered I had over 10 cups of butternut squash. So, I 1+1/2ed the recipe. I had enough of all the ingredients to accommodate this, with the exception of lite coconut milk. I had a can of full fat coconut milk so I used 1 can lite, 1/2 can full fat. My soup was deliciously creamy. Because it turned out so perfectly, I’ll probably do the same thing next time I make it.
Other specs: I used coconut oil, maple syrup, and did not use chili garlic paste as I did not have it. I do love heat though so I’ll try that next time.
This recipe is a keeper for sure and my family loved it. I cannot wait to make (and eat) this again! Thanks Dana (Minimalist Baker)!

What a great (and easy) recipe. Nice bite to it. The garlic-chili paste may have been too much for a couple of our guests, but those who like spice were very happy. I served it with the pumpkin seeds and a swirl of pure maple syrup.
