- 4 celery ribs (cut into large pieces)
- 1 onion (large, peeled and cut into 4 pieces)
- 2 cups chicken stock (or turkey stock)
- 1 1/2 Tbsp. arrowroot starch (for gravy, or use double that amount of cornstarch)
- 1/4 cup cold water (used to mix into starch for gravy)
