This soup was great! I tweaked the recipe a bit by roasting the cauliflower and carrot in 1-2 Tbsp of coconut oil and 1-2 tsp ground turmeric. Then added coconut milk when cooking the veggies in the pot to make it more creamy. Oh! I also added toasted almonds and coconut shreds for a little crunch.

I was honestly surprised at how much I liked this soup. I do think the roasted garlic is key, but would definitely make again. I added some large white beans (from a can), which went in the blender with the other soup ingredients, to add some extra protein to the meal. Oh and as a topping I used crumbled up tempeh/ oven baked red cabbage! Both were really good as well :-)
