- 4 slices bacon (thick cut)
- 1 lb. chicken breast boneless (and skinless, cut into small bite size pieces)
- 1 oz. ranch salad dressing mix (1 packet or 2 tbsp)
- 8 oz. penne (uncooked, or pasta of your choice)
- 3 1/2 cups chicken broth low sodium (or no salt added)
- 4 oz. cream cheese (I used Philadelphia)
- 2 cups cheddar cheese (shredded)
- 1 Tbsp. parsley (chopped)

Good stuff, husband loved it. Will use the full 4 cups of broth (in Tera box) and pound of pasta next time. Will also half the cheese but those are personal preferences, very good as written.

It was excellent, but I didn’t exactly follow the recipe.
I cooked the noodles in water (the usual way).
Put ordinary bacon in air fryer (300 for 20-25 mins)
I roll the bacon & stand them on their edge
In cast iron frying pan:
•Cooked up 2 chopped onions (about 15 mins in bacon fat)
•Add 4 chopped cloves garlic
•Cook for another minute
•Take onions & garlic out of pan
•Put more bacon fat in frying pan
•Add cubed chicken thighs
•Cook on high 5 mins or so
•Add lots of ranch dressing (I buy the big bottles at Costco)
•Cook about a minute
•Add cream cheese (way too much 3x recipe)
•Stir a bit
•Add heavy cream
•Add onions & garlic back
When the noodles are done, drain them & add them to the chicken.
Done.
I didn’t have cheddar at home (that’s why extra cream cheese).
Top w/freshly shredded Parmesan and
nice, crispy bacon
(Not for the calorie conscious or the keto/paleo diet 😉)

I followed the suggestion and cooked my chicken in the bacon fat. Holy cow! The cream cheese really made it so creamy too. Definitely keeping this recipe.

I want more it was amazing...don’t drain the bacon grease that’s for wimps. Cook the chicken in that $&@* and then add the ranch and it becomes like a rue...freaking amazing!!!

too much cheese. if i make this again im going to cut down on the cheddar. other than that it was quick and easy to make

It was very cheesy but it had a great flavor. I would recommend more ranch if you like a stronger ranch flavor. It literally cooked exactly like it said it wasn’t too much broth or anything. Would recommend trying especially for kids and picky eaters.

It was ok. Very rich. Would make changes the next time. Less cream cheese and add evaporated milk to make it more like Mac n cheese.
