- 1 cup yellow cornmeal (stone-ground coarse)
- 1/4 cup all-purpose flour
- 1 1/2 tsp. baking powder
- 1 tsp. kosher salt
- 1 egg
- 1 cup buttermilk
- 1/4 cup fresh corn (cut from the cob, can also use frozen)
- 1/4 cup sweet onion (diced)
- 1/4 cup poblano chiles (fresh, chopped, can use any type of green chile)
- 1/2 cup shredded cheddar (or longhorn cheese)

I am more accustomed to an even ratio of cornmeal and flour. I added extra flour and then extra buttermilk, and it came out great. Making this in a cast iron skillet was definitely the way to go.

Good cornbread but definitely dry. Would make again but modify.

Followed the recipe exactly and the Corn bread turned out a little on the dry side. I think I prefer the traditional cornbread
