- 2 Tbsp. olive oil (divided)
- 1 lb. lean ground beef
- 1 1/2 cups yellow onion (chopped)
- 1 cup carrots (diced, about 2 medium)
- 1 cup diced celery (about 3 stalks)
- 3 cloves garlic (minced, 1 Tbsp)
- 24 oz. tomato sauce (3 cans, 8 ounces each)
- 29 oz. low sodium chicken broth (or beef broth; 2 cans, 14.5 ounces each)
- 1/2 cup water (then more as desired)
- 15 oz. diced tomatoes (canned)
- 2 tsp. granulated sugar
- 1 1/2 tsp. dried basil
- 1 tsp. dried oregano
- 3/4 tsp. dried thyme
- 3/4 tsp. marjoram (dried)
- salt (to taste)
- freshly ground black pepper (to taste)
- 1 ditalini pasta (scant cup dry)
- 15 oz. red kidney beans (dark, drained and rinsed)
- 15 oz. Great Northern beans (drained and rinsed)
- romano cheese (Finely shredded, for serving)
- 3 Tbsp. fresh parsley (minced)

This was the best! It makes a very large amount and next time I make it, I will cut it in half. Great idea of cooking pasta before adding to soup.

Best soup ever!!! I took this yo work for a potluck. I bet I have given the recipe to about 25 people and ask numerous times, when are you going to make it again. Making it for dinner tonight.

Cool half of the onion with the ground beef and add half the garlic and herbs halfway through browining. this makes sure you have flavor concentrations in the meat itself. I didnt have enough plain tomato sauce so I used a jar of marinara instead and it turned out delicious.
I added about 1/2 tsp red chili flakes because I likey soup to keep me warm. A splash of brewed soy sauce works wonders for bringing out those rich meaty flavors. Also, dont add salt until the soup is in your bowl. This makes sure your seasoning isn't affected by the soup reducing as it cooks.

This is a great soup; I’ve made it several times. I was too tired to chop so I substituted frozen carrots, peas, spinach, and onions - still yummy!

Love it - I substituted mild Italian sausage for ground beef bc it was what I had on hand & it came out perfect. I am certain the beef gives it a flavor more similar to the original Olive Garden, but it was delicious. I also had to substitute mini shells for the pasta as the stores around me did not carry that type. I cooked my pasta for only 3 minutes & then added to the individual bowls as I served to avoid having mushy pasta in leftovers. Great recipe.

It turned out very well flavor full. I will deviated make it again but will substitute tomato paste for the tomato sauce.

This was absolutely fantastic. Never ate it at Olive Garden but who cares this was easy, taste and makes a lot of soup. It’s on again for dinner tomorrow. Thanks for a great recipe.

Absolutely delicious! I used beef broth instead of chicken broth and enhanced the beef flavor with 2 tbls. of beef “Better than Boullion” mixed in 3/4 cup of water.

This was very good soup. I made mine with cooked ground spicy Italian sausage which Gave it more flavor. And I served noodles on the side. Next time I think I’ll make more broth & add more veggies, such as, spinach & zucchini.

Awesome! We make it once a month my entire family loves it. We use fresh herbs and I grate 3 cheeses in it - sweet and a family favorite for sure!

Spot on rendition of the OG product. Except theirs is pre-made and comes out of a plastic bag. So good and in my opinion, way better!

Yum, added rotel tomatoes for little zip. And 12 ounces v8 tomato juice. Had some grilled zucchini which I added also. Don’t drain beans. Used with homemade pasta. Definitely make again.
