What’s better than a muffin in the morning? These Coffee Muffins are absolutely amazing and will tantalize the taste buds and leave the senses in pure bliss. They take 45 minutes to make and have 310 calories. The rich coffee flavors and aromas will pour from the oven as they bake. And after they cool, when you frost them with the creamy frosting made with sugar, instant coffee, water, cream cheese and superfine sugar, they will take you to heaven.

- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 pinch salt
- 2 Tbsp. instant coffee
- 1 cup milk
- 1/2 cup butter (melted)
- 2 eggs
- 1 cup sugar
- 2 Tbsp. instant coffee
- 1 Tbsp. water
- 150 grams cream cheese
- 7 Tbsp. superfine sugar

Directions
- Preheat the oven to 200 degrees Celsius.
- In a bowl, sift the flour, baking powder, baking soda, and salt.
- Dissolve the coffee in the milk. Add the butter, eggs, and sugar. Mix well. Add to the flour and mix. Do not overbeat.

Super big ! Or replace white sugar with molasses sugar and brown sugar. Reduce to 2/3 cup of sugar instead of 1 cup. Not doing any frostingn.
