I use brown sugar, palm sugar, maple syrup, or ½ brown or palm sugar and ½ maple syrup. syrup. You can also add shredded coconut for added coconut flavour.

- 1 3/4 cups flour
- 1 1/2 tsp. baking soda
- 3/4 tsp. salt
- 3 eggs
- 1 1/2 cups sugar
- 3/4 cup coconut oil
- 1 cup bananas (mashed ripe, about 2 large bananas)
- 2 Tbsp. peanut butter (or as much as you like, optional)

Directions
- Preheat oven to 350° and coat pan with non-stick spray.
- Whisk flour, baking soda and salt in a medium bowl
- Whisk eggs, sugar, bananas, coconut oil in a large bowl until smooth. This is also where you add peanut butter and shredded coconut if you’re including this.
- Add dry ingredients to banana mixture and stir just until combined.
- Scrape batter into prepared pan and smooth top. Bake until a tester inserted into the centre of bread comes out clean, about 60-70 minutes (less if doing muffins).
