Mom's chicken curry with fresh coconut masala.
Notes: 1. If you are not keen on spice, just use 1 or 2 chile peppers. 2. If you cannot find fresh coconut, you can use dried unsweetened coconut shavings.

- 3 Tbsp. coriander seed
- 1 tsp. black peppercorn
- 1 tsp. mustard seed
- 10 cloves
- 1/2 star anise
- 1 cardamom pod
- 1 cinnamon stick
- 4 red chile peppers
- 4 cloves garlic (halved)
- 1/4 onion (sliced)
- 1 cup coconut (shredded fresh)
- 1/2 tsp. turmeric
- 2 1/2 lb. chicken thigh (roughly cubed)
- 1 onion (chopped)
- 1 tomato (chopped)
- 1/4 cup chopped cilantro
- 3 Tbsp. coconut oil

Directions
- Toast the first 8 ingredients in a skillet for a minute or two and set aside.
- In the same skillet, heat 1 tbsp of the coconut oil. Sauté the sliced onions and garlic cloves until the onions are translucent. Set aside.
- In the same skillet, heat another tablespoon of coconut oil and toast the shredded coconut
