I almost never buy fish, but there was a significant sale…and it was the nudge I needed to try this easy recipe. Wow! Even my family, who won’t eat fish….tried it….and LOVED it!!! Yay!
I did doctor the recipe a bit because I didn’t have exactly what the recipe called for.
I didn’t have exactly 2 pounds of potatoes but 1.75 lb. I suplimented that with a handful of dried potato flakes. I had 1.5 lb of Cod, so that’s what I added. I used dried parsley (2 handfuls). I added about 1 tsp of Old Bay (because family likes OB), a handful of Italian Seasoned bread crumbs, and an egg to the mix to help bind it all.
It was SOOoooo good! ….and so easy!

great recipe, cakes are tender and mild. Can easily season as you wish. Only complaint is the cakes do fall apart easily. lost a small cake it entirely dissolved in the oil. I thought it wouldn't work with fresh mashed potatoes- I normally use leftover potatos but its works ok. Next time i will add at least an egg white to help it bind together or consider poaching the fish and making the potatoes a day ahead.

Once I got the oil temp right to properly brown them they were perfect. My husband went back for seconds. This has been added to my list of go to recipes.
