- 5 cups green tomatoes (coarsely chopped)
- 5 cups cabbage (coarsely chopped)
- 1 1/2 cups yellow onion (finely chopped, or sweet onion)
- 2 cups chopped bell pepper (coarsely, 1 red for color)
- 1/3 cup kosher salt (or pickling salt)
- 2 1/2 cups cider vinegar
- 1 cup light brown sugar (packed)
- 1 Tbsp. yellow mustard seeds
- 2 cloves garlic (finely minced)
- 1 tsp. celery seed
- 1/2 tsp. red pepper flakes (or to taste, optional)

Edit: Have made this quite a few times.
Makes 3 quarts. Can increase to 7-1/2 cups of cabbage. 2 full cups of onions. 3 large cloves garlic. Increase vinegar to 2 cups if you do this. Still makes 3 quarts.
Can use couple jalapenos in place of red pepper flakes. Also can add a pinch of powdered ginger.
Turned out very good. I used tomatoes that were turning from green to red but still firm. I salted only the tomatoes for four hours than rinsed, using a tablespoon of salt. A quick rinse got rid of excess salt. I wanted it to retain some of the salt. Salting was unnecessary for the onion, peppers, and cabbage. They keep themselves pretty crisp. Just don't over-blanch. The rest of the seasoning was identical to instruction.
If you don't pre-salt the vegetables, about 1 Tb of salt in recipe.
