- 1/2 can coconut cream
- 1/4 tsp. stevia (crystals)
- 1 banana (medium ripe)
- 2 Tbsp. natural peanut butter (all-, crunchy or smooth-- the only ingredients should be peanuts)
- 2 Tbsp. coconut cream (Trader Joe's recommended)
- 1/4 cup coconut milk (regular, Taste of Thai or Trader Joe's recommended)
- 1 Tbsp. cocoa powder
- peanut butter
- unsweetened desiccated coconut
- walnut pieces
- raspberries (optional)

Directions
- make the coconut whipped cream first. Add both ingredients into the food processor and blend about 15-20 seconds. Add to a container and place in the fridge.
- for the pudding, add all ingredients into the food processor. blend about 10 seconds, scrape the sides then blend again. Keep doing that until smooth. Also taste and see if you want to add more cocoa powder for a more chocolatey taste or PB for well, you know!
- place in jar and put lid on. cool for about 10 min
- top with a couple spoonfuls of the coconut whipped cream, peanut butter, coconut, walnuts then raspberries on top
- enjoy the rest of the coconut whipped cream later (try with raspberries, walnuts or just eat on it's own!)
