- 2 poblano chiles (each)
- 2 Anaheim chiles (each)
- 4 plum tomatoes (each)
- 1/2 cup onion (fine dice)
- 1 Tbsp. cilantro (chopped)
- 1 tsp. oregano (fresh, chopped)
- 1 lime juiced (each)
- 1 tsp. garlic (minced)
- 1 Tbsp. extra-virgin olive oil
- kosher salt
