Description
Asparagus is best enjoyed in the spring when it is at its freshest. This recipe is perfect to enjoy this time of year and will soon become a favorite in your springtime dinner rotation. Chicken breasts add a bit of lean protein, while lemon and garlic add bold flavor that brightens the dish and brings it all together. The pasta makes this a filling meal that will keep you satisfied. You can enjoy this wamr for dinner or enjoy it cold the next day for lunch.

- 250 grams asparagus (green)
- olive oil
- 2 chicken breasts (cubed)
- 1 lemon (untreated)
- 1 garlic clove
- salt
- ground black pepper
- 350 grams tagliatelle (fresh)

Directions
- Cut the asparagus into wedges, and cook in a pan of boiling water for 4 minutes (they should be firm). Remove from pan, and refresh in cold water for about ten seconds, drain.
- In a frying pan, heat a dash of olive oil, and on high heat fry chicken cubes until golden. Reduce the heat and gently cook the meat for about 10 minutes. Season with salt and pepper. Add the chopped garlic and asparagus.
- Cook the pasta according to package instructions.
- Drain and pour the pasta into the pan with the chicken. Add the lemon juice and stir gently.
- To serve, arrange on plates, and sprinkle with lemon zest.
