Directions
- 1. Cut the chicken into pieces and remove the skin. Roll the chicken in saffron.
- 2. Clean the mushrooms and remove the skin. The mushrooms should not be too big since they will be cooked whole.
- 3. Place the chicken and mushrooms in a dutch oven. Add the salt, pepper, garlic, shallots, and parsley. Add water and simmer for about 3 hours.
