- 1 onion (large, chopped)
- 1/2 bell pepper (chopped)
- 2 stalks celery (chopped)
- 5 cloves garlic (chopped)
- 2 Tbsp. worcestershire sauce
- 1 can diced tomatoes
- 3 cups chicken stock
- 2 cups rice (uncooked)
- 1 chicken breast (large)
- 1 lb. andouille sausage (chopped)
- 2 Tbsp. parsley
- 1 1/4 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. oregano
- 1/4 tsp. red pepper (cayenne)
- 1/4 tsp. ground thyme
- 2 Tbsp. vegetable oil (or bacon grease)

Directions
- Bake chicken in the oven for 20 minutes. While this is cooking dice all of the veggies and sausage. When the chicken is cooked, shred or chop and set aside.
- Add onion, bell pepper, vegetable oil, and celery to the bottom of a large stock pot. Saute for 5 minutes, or until onion becomes translucent.
- Add tomatoes, garlic, parsley, sausage and chicken and simmer for 5 minutes with lid on.
