Description
Think of chicken schnitzel as fried chicken’s European cousin. Thin chicken breast cutlets are breaded and pan-fried instead of deep-fried, delivering juicy meat with a crunchy, golden brown crust. Serve them with a simple green salad dressed with lemon juice and olive oil for a quick but luxurious meal. Note: If you can’t find chicken breast cutlets at the market, cut boneless skinless chicken breasts in half horizontally with a sharp knife into two even pieces. Then if necessary, pound them with a meat mallet or rolling pin to produce thin cutlets. The recipe is a Yummly original created by Ivy Manning.
Ingredients
- 4 boneless, skinless chicken breast cutlets (1/2 to 3/4 inch thick)
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper
- 1/2 cup all-purpose flour
- 2 large eggs
- 2 Tbsp. Dijon mustard
- 1 1/2 cups panko breadcrumbs
- 1/2 cup canola oil (or vegetable oil)
- chopped parsley (optional)
- 4 lemon wedges
Directions
- If chicken cutlets are thicker than 3/4 inch, place them between sheets of plastic wrap and pound them with a meat mallet or rolling pin to 3/4 inch thick. Season chicken on both sides with salt and pepper. Set aside.
- Place flour on a dinner plate. Whisk eggs with mustard in a shallow bowl until blended. Place panko on a second dinner plate.
- Heat oil in a large frying pan over medium heat until it shimmers. If you don’t have a frying pan that fits all the chicken, use 2 pans, dividing the oil between them.
