Description
Satay is a dish of seasoned meat that is grilled on skewers and served with a sauce. This chicken satay recipe is inspired by the flavors of Thai cuisine. Cut into bite size chunks, the chicken is marinated in oil, lemon juice, and soy sauce. The longer the chicken marinates, the more flavorful and tender it will be. Served with a peanut sauce, this Chicken Satay is a Thai dream come true. Serve on a bed of rice. If using wooden skewers, be sure to soak them so they do not burn while grilling the meat.
Ingredients
- 2 Tbsp. vegetable oil
- 1 Tbsp. sesame oil
- 200 mL soy sauce
- 1/2 lemon (juiced)
- 700 grams chicken tenders (cut into bite size chunks)
- 2 Tbsp. vegetable oil
- 2 onion (small, finely diced)
- 1 garlic clove (diced)
- 125 mL peanut butter creamy (version)
- 250 mL water
- 1/2 lemon (or lime, juiced)
- 1 pinch cayenne pepper
Directions
- Soak the kebab sticks in water so they do not burn during cooking.
- In a bowl, mix together the vegetable oil, sesame oil, soy sauce, and lemon juice. Add the chicken and stir well. Cover with plastic wrap and marinate in the refrigerator as long as possible.
- Heat up the 2 tablespoons of vegetable oil in a skillet and add the onion. Saute until softened then add the garlic stirring everything together.
