Description
Easily make Chicken Pad Thai using ingredients you already have on hand! This delicious Pad Thai recipe doesn't use Tamarind (or ketchup!)
Ingredients

- 7 oz. rice noodles (thin flat)
- 2 eggs
- 1 tsp. sesame oil
- salt
- white pepper
- 1 Tbsp. vegetable oil
- 1/2 lb. chicken (cut into thin strips)
- 3/4 cup shredded carrots
- 3 green onions (chopped and divided)
- 3 cloves garlic (pressed or minced)
- 1/2 cup dry roasted peanuts (finely minced and divided)
- 1 lime (cut into wedges)
- chopped fresh cilantro
- 1/4 cup brown sugar
- 2 Tbsp. rice vinegar
- 3 Tbsp. gluten (free fish sauce, I like 2-1/2 T)
- 2 Tbsp. gluten free tamari sauce (low-sodium, dish will not be GF if using traditional soy sauce)
- 2 tsp. Sriracha hot sauce (optional)

A week night favorite. Easy to add extra veggies. We've made it several times. Use extra-firm tofu it you want it to hold shape don't skip pressing the tofu.
