Chicken Enchiladas With Cocoa and Chili Sauce

Slow-cooked in a dutch oven alongside carrots, leeks, and bay leaves, the chicken at the heart of these enchiladas is tender and flavorful. The chicken is then shredded and added to a mixture of sauteed onions, piquillo peppers, and chipotle sauce for a smoky filling that is sprinkled with cheese and rolled up in a tortilla. The crowning glory of this dish is the chocolate and chili sauce poured over the top of the enchiladas before being covered in cheese and baked until melted and golden.
Ingredients
- 6 wheat (or corn tortillas)
- 1 kg chicken thighs (if they are boneless, a little less)
- 1 carrot (peeled)
- 1 leek (very clean)
- 1 bay leaf
- 1/2 onion (chopped)
- 4 peppers (3 or ,piquillo, cut into thin strips)
- 1 tsp. chipotle sauce (or the same amount of chipotle in adobo and crushed)
- 150 grams grated cheddar cheese (+ 50)
- 30 grams almonds (sliced)
- 1 onion (thinly sliced)
- 2 Tbsp. cocoa (pure , without sugar)
- 1 Tbsp. tomato paste
- 1 tsp. chili peppers (ground ,it is optional, you can not put it, or put more. It depends on your taste for spiciness)
- 150 mL wine (sweet)
- 300 mL chicken broth
- 2 Tbsp. cream (liquid)
- 1 Tbsp. cornstarch
- olive oil
- salt
- pepper
Directions
- In a heavy-bottomed saucepan, add the clean chicken, the carrot, the leek and the bay leaf. Cover with salt water. Bring to a boil, lower heat and cook for about 40 min or until done. Remove the chicken from the broth and let it reduce a little. Reserve the chicken in a plate and 300 ml of the broth in a bowl, for the sauce.
- In a saucepan, heat a little oil, add the onion, let it soften over low heat. Add the cocoa, the ground chilies, and the concentrated tomato. Stir and add the wine and broth. Season with salt, stir again and cook for a few more minutes.
- Add the cornstarch dissolved in two tablespoons of broth and stir until the sauce thickens. Turn off the heat and add the cream. Reserve.
