Good. Used La Victoria green enchilada sauce, leftover thigh meat from making soup. Sprinkled seasoning on onions instead. 28oz can of sauce was plenty for 1lb of meat. Easy weeknight meal.

Turned out great. I did use rotisserie chicken and seasoned it up with spice recommended.

Green chili chicken enchiladas have been a staple for generations.
The onions were a nice touch but I did miss the chunks of green chili.
Top with shredded lettuce tomato and onion for a traditional finish.

This is 547 calories as written. Great recipe, I used red enchilada sauce, will try the green one next. I would use 2 onions as it was such a nice flavor. And we like it spicy so I added one chipotle pepper with some adobe sauce! Next time I will try to make my own sauce too! Served with Mexican Street corn. Bake 350 30 minutes, uncovered.

My husband loved this enchilada recipe! I have tried a few others trying to find the very best one that my family likes and I think this won! Even my 15 month old son loved it! I will definitely be making this again! 🙂

I used a powdered enchilada sauce that I got in Sant Fe. Other than that I followed this recipe and it was excellent.

The flavor of the chicken was AMAZING I use it now to season my chicken in other recipes. I really loved the flavor it gave when sautéing the onions. Cannot wait to make again!

Excellent!!! I loved all the spices creating a smoky heat and not having to use any salt. I went with the red enchilada sauce!
