- 16 oz. chow mein noodles (fresh, or 8 ounces dried spaghetti, cooked according to instructions)
- 2 Tbsp. olive oil (divided)
- 1 lb. boneless chicken breast (cut into 1" cubes)
- 3 garlic cloves (minced)
- 1/2 Tbsp. minced ginger
- 1 red bell pepper (sliced thinly)
- 1 medium carrot (sliced into thin matchsticks)
- 2/3 cup shanghai bok choy (washed and sliced thinly)
- 1/2 cup snow peas (trimmed)
- sesame seeds (for serving)
- sauce
- 1 Tbsp. corn starch
- 1 Tbsp. oyster sauce
- 1 Tbsp. soy sauce
- 2 tsp. brown sugar
- 2 tsp. fish sauce
- 1 tsp. mirin (or Chinese cooking wine or dry sherry)
- salt
- pepper
- 1/4 cup water (and reserve another 1/2 cup water to thin out the sauce)

this was so tasty and easy, hubby and kids loved it

I didn’t use oyster sauce because I didn’t have any but it still came out great. The water at the end helped make the sauce less thick. I actually used chicken stock instead of water and it added more flavor. Recommend!
