Lip-smacking delicious! For extra tenderness and deeper flavor, I substituted a dry white wine for the chicken broth and I used some finely chopped carrot to the initial sauté of onion, celery and garlic. I also used baby bellas because that’s what I had on hand. I especially like this stew over brown rice and, of course, the flavor blends and intensifies when served the next day - if you actually have any leftovers!

I love this meal! We like spice so I added a scotch bonnet diced pepper. I used breasts, thighs and legs together. If possible the leftovers were almost better than the first night!
