- 15 oz. seafood stock
- 1/2 cup white wine
- 1/2 cup water
- 1/2 tsp. kosher salt
- 1 cup grits (I use Bob's Red Mill)
- 3 Tbsp. heavy cream
- 3 Tbsp. unsalted butter
- 2 cups sharp cheddar cheese (shredded)
- 2 Tbsp. olive oil (or bacon grease)
- 1 lb. shrimp (shelled and deveined large raw shrimp)
- 1/4 tsp. black pepper
- 3 garlic cloves (minced, should be a heaping teaspoon)
- 1 Tbsp. flat leaf parsley (chopped)
- 1 tsp. smoked paprika
- 1 tsp. Worcestershire sauce
- 2 dashes hot sauce (i.e. Tabasco)
- 4 tsp. lemon juice (usually equivalent to the juice of 1 whole lemon)

This was my first time having grits, so I had no idea if I was going to like them or not, but these were delicious! I didn’t have seafood stock, so I used 1 cup chicken broth instead and also omitted the wine. I used 3 tbsp quick cooking grits for one serving and followed the package directions. Once finished, I used 1 tbsp butter, 1 tbsp heavy cream, and a 1/2 cup of cheese.
For the shrimp I replaced the minced garlic and hot sauce with 1 tsp of chili garlic sauce. It was a little too spicy for my tastes, so next time I’ll probably cut that down to 1/2 tsp. I also accidentally used too much worcestershire sauce but it just provided some extra flavor. Lastly, 2 tsp of lemon juice was a little overpowering in my opinion (I prefer my lemon flavor a bit more subtle), so I’ll probably cut that in half next time, too.
Overall the dish was delicious and I would definitely make again, but I think I’d want to cook the grits and shrimp at the same time because the grits were almost cold by the time the shrimp was finished.

Astronomical!!! I used red radishes as a garnish, added red onion, a jalapeno, and added a tough of feta cheese and white wine in the grits and the shrimp? My husband asked if I had food delivered(^_-)-☆

I would make this again. I loved it. My kids, on the other hand, did not.

Overly salty and the liquid in the pan doesn't constitute sauce... its more like pan drippings.

it was ok. There was not enough luquid to lroduce the sauce. Too thin.
