I did not have all ingredients so substituted 1 cup light cream and 1/2 cream cheese for 1 1/2 cups heavy cream. Did not have Gruyere cheese so went with shredded English cheddar instead. Did not add quite as much because it is a strong cheddar. Also added some chopped sun dried tomatoes that I soaked first. The only thing I would do differently is cook the bacon part way in the oven before adding it to caramelized onions. It turned out amazing!
