EDIT: The soup thickened up nicely after it had been refrigerated and reheated. I would make again.———-Waaaaay too much chicken stock. Came out so watery and I didn’t even add but 4 cups instead of 6.

Delicious! Kept squash in pot and blended with immersion blender. Added a little half and half.

I roasted the squash before I put it in the chicken broth and onions. Also I added half and half at the end. Ended up with a very creamy soup
