- 1 1/2 cups yellow onion (peeled, cleaned,and diced small)
- 5 cups butternut squash (peeled, seeded,and diced large)
- 4 Tbsp. roux (thickner)
- 1/4 cup orange juice
- 1 tsp. ground nutmeg
- 1 tsp. ground clove
- 2 tsp. salt (or to taste, .06ounces)
- 1 tsp. ground white pepper (or to taste)
- 2 Tbsp. sugar
- 2 cups heavy cream
- 6 cups low sodium chicken stock
- 4 Tbsp. salted butter (or one half stick)
- 2 cups celery (diced small)
- 1 1/2 cups carrots (peeled and diced)

Directions
- Melt butter in large pot
- Add onions, carrots, celery and butternut squash and sauté until translucent
- Add chicken stock, sugar, clove, nutmeg and orange juice and simmer for about 20 minutes until squash is cooked and tender
