- 2 butternut squashes (1 is good for about 3 good portions;)
- 2 cans coconut milk (depending on the number of squashes you prepare., you’ll find it in most grocery stores and at your health food store, look for organic without any other ingredient except maybe guar gum;)
- sea salt
- ground black pepper
- herb (Any fresh or dried, you’ve got laying around;)

turned out wonderful! love the coconut milk with squash and i added allspice and nutmeg.

It was easy to prepare but definitely needs herbs/spices to enhance the flavor. It takes longer than the “30 minutes “ it claims.. the butternut squash must cook in over for 45. I did use an emersion blender so clean up was pretty simple: one pot, one baking sheet, two utensils.

Great!!! I added a cup of homemade chicken bone broth, too LOVED IT!!made the servings more like 5!! Delish!

OMG WOW the best soup i ever tasted, i will never eat another soup again. i died and went to heaven. YUMYUMYUM! :)
