Great, although I did that the advice of the comments and added salsa instead of the sun-dried tomatoes

Very good. I highly recommend topping them with Pico de Gallo or fresh salsa, then a dollop of sour cream after. Yum

These were good, but just ok. The corn tortillas were difficult to work with and kept splitting. They held very little filling as I would've liked as a result. I also found that they did not need to be in the oven as long as listed. My test batch was over-browned and too crispy/crunchy. The remainder I baked for only 8 minutes or so and they were golden brown and crispy = much better. However, they seemed a bit "one note" to me. I'm trying to figure out what I could do to jazz them up for next time. They most definitely need salsa, sour cream or guacamole. If I make them again, I will use flour tortillas. Flour tortillas are slightly bigger and I feel more filling needed to be inside of these. Plus flour tortillas will be easier to roll.

soo yummy. i used bacon in some and breakfast turkey sausage in some. the sun dried tomatoes really made the dish. good to heat up and take on the go. yum!! will make again.
