Absolutely delicious! I followed the gist of the recipe but instead used sausage instead of bacon & added salt, pepper, garlic & parsley, and cooked it for longer. It took me about 30 minutes because I liked softer potatoes. I also recommend mixing the final product and letting it sit for five minutes w low heat & a covering over the pan to let it combine nicely, otherwise 10/10 super easy breakfast that feeds a family!

Lovely
I added peepers and sausage and extra bacon to the mix!

I modified this for my family of 6 (2 adults, 1 teenager, and 3 kids). I browned a pound of breakfast sausage and cubed 2 cans of potatoes (that was what was in the pantry) after the meat was browned. After 5 minutes I added 7 eggs and cooked with a lid on low for 10 minutes, then added the cheese. Everyone loved it! Next time I will try it with the actual directions.
